Creamy Pan-Braised Fennel |

The distinctive flavor of fennel makes a terrific accompaniment to ham, roast beef, or pork. Ingredients:
4 large fennel bulbs |
1 1/2 cups whipping cream |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/4 teaspoon ground nutmeg |
1/4 cup fine, dry breadcrumbs |
1/4 cup shredded parmesan cheese |
1 1/2 tablespoons butter or margarine |
Directions:
1. Trim bases from fennel bulbs; cut into eighths, reserving fronds for another use. Arrange fennel in a lightly greased 11- x 7-inch baking dish. 2. Whisk together whipping cream and next 3 ingredients, and pour over fennel slices. Sprinkle fennel slices with breadcrumbs and Parmesan cheese; dot with butter. 3. Bake, covered, at 425° for 20 minutes. Uncover and bake 20 more minutes or until fennel is tender and yields when a knife is inserted into the thickest slices. Serve immediately. |
