Creamy Orzo With Leeks and Parmesan |

You will get lots of raves with this wonderful side dish. Ingredients:
4 tablespoons butter |
2 large leeks, cleaned and sliced thinly |
1 cup chicken stock |
1 cup orzo pasta |
1/2 cup heavy cream |
salt and pepper |
ground nutmeg (optional) |
4 tablespoons grated parmesan cheese |
Directions:
1. Cook orzo in boiling salted water and drain. 2. While orzo is cooking, melt butter in large sauté pan. 3. Add leeks and cook over medium heat until they are softened. 4. Add chicken stock and simmer until the stock almost disappears. 5. Add cream to the sauté pan with the leek mixture. 6. Add cooked orzo and heat thoroughly. 7. Season with salt, pepper and nutmeg to your taste. 8. If it looks a little dry, add a little extra cream. 9. Just before serving, add the Parmesan and stir until it melts. |
