Creamy Orzo W/Feta & Sun-Dried Tomatoes |

This pairs with Greek Chicken Roulades W/White Wine Reduction, very nicely, also from Cuisine at Home magazine. Start boiling the pasta before making the roulades, then finish the orzo dish while the chicken simmers. Ingredients:
1 1/2 cups chicken broth |
1/2 cup orzo pasta |
2 tablespoons sun-dried tomatoes packed in oil, minced |
2 tablespoons feta cheese, crumbled |
1/8 teaspoon kosher salt |
1/8 teaspoon pepper |
Directions:
1. Bring broth to a boil in a small saucepan and stir in orzo. 2. Return liquid to a boil. 3. Cook orzo, uncovered, stirring occasionally until liquid is absorbed, approximately 9 minutes. 4. Remove saucepan from heat. 5. Stir tomatoes and feta into orzo, mixing until feta melts slightly. 6. Season orzo with salt & pepper. 7. Serve with the Chicken Roulades. |
