Creamy Orange Ricotta Tart |

A fresh creamy dessert, great served with fresh berries. Ingredients:
1c vanilla cookie crumbs |
2t sugar |
3t unsalted butter, melted |
11/2c whole-milk ricotta |
3oz cream cheese, at room temp. |
3/4c sugar |
2t flour |
1/4tsp salt |
3 large egg yolks |
1t orange flavored liqueur such as grand marnier or cointreau |
Directions:
1. CRUST: Melt butter in microwave and mix into cookie crumbs and sugar. Press onto bottom and up sides of a 9 tart pan. Bake in a 350F oven until fragrant about 10 mins. Set aside to cool. 2. FILLING:Combine cream cheese and ricotta in a medium bowl and beat on med. speed until well blended. Add the sugar, flour and salt; blend well. Add the egg yolks, orange zest and orange liqueur. Beat until just incorporated. Scrape filling into crust and spread the filling evenly. 3. Bake the tart until the filling just barely jiggles, 30-35 mins. Cool completely on rack. Refrigerate the tart in the pan until firm, 2-3 hours. |
