Creamy Orange Cheesecake In The Crock Pot |

I didn't believe it was possible either...a cheesecake in the crockpot? I made this and it is fantastic. Enjoy Ingredients:
3/4 cup cookie crumbs |
2 tablespoons granulated sugar |
3 tablespoons melted butter |
16 ounces cream cheese softened |
2/3 cup granulated sugar |
2 eggs |
1 egg yolk |
1/4 cup frozen orange juice concentrate thawed |
1 teaspoon orange zest |
1 tablespoon flour |
1/2 teaspoon vanilla |
Directions:
1. Combine crumbs with sugar then mix in melted butter until well moistened. 2. Pat into a small spring form pan. 3. In medium bowl cream together cream cheese and sugar. 4. Add eggs and yolk and beat for 3 minutes on medium with a handheld electric mixer. 5. Beat in orange juice, zest, flour and vanilla then beat another 2 minutes. 6. Pour batter into prepared crust and place on rack or aluminum foil ring in crock pot. 7. Cover and cook on high for 3 hours then turn off and leave for 2 hours. 8. Remove from crock pot and cool completely and remove sides of pan. 9. Chill before serving and store leftovers in the refrigerator. |
