A somewhat comfort food. This, as almost any hot soup, is good on those chilly fall and winter nights. Ingredients:
3 onions, chopped |
2 tablespoons butter or 2 tablespoons margarine |
3 beef bouillon cubes |
3 cups boiling water |
1/2 teaspoon tarragon |
1 potato, cup up |
2 teaspoons white wine vinegar |
1/2 cup light cream |
cubed cheese (your choice) |
chopped peanuts |
Directions:
1. Saute onions until tender and golden. 2. Add Oxo cubes, boiling water, tarragon& potato. 3. Simmer, uncovered, until potato is cooked (20 min?). 4. Puree in a blender or use a hand blender if available. 5. Return to pot, add vinegar and bring to a boil. 6. Reduce heat, stir in cream (salt& pepper and some green parsley as well). 7. Serve and top with cheese cubes and chopped peanuts. |
