                    Ingredients: 
                    
                        
                                                3/4 cup(s) brown rice + 1/2 t salt  |  
                                                4 tablespoon(s) butter  |  
                                                1 cup(s) half & half  |  
                                                1 1/2 teaspoon(s) salt  |  
                                                7 cup(s) slices onions (vidalia)  |  
                                                1 1/2 cup(s) swiss cheese (grated  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Start brown rice cooking with 1/2 teaspoon salt. Cook for 20 minutes. Saute onions in butter until soft and translucent (about 3 minutes). Drain rice. Add to onions. Add 1 cup grated swiss cheese, Half & Half and salt. Reserve 1/2 cup grated swiss cheese to top). Mix well and pour into a 2 qt casserole. Sprinkle with remaining swiss cheese. Bake at 325 for 30 minutes. Can be served hot or cold. Casserole can be frozen now and baked when ready to serve.                              |
