Creamy Mussel And Prawn Soup |

An easy soup which will please everyone.The longest part of the prep is the mussels, but if you buy them ready shelled its much quicker. Ingredients:
1kg cooked mussels (this is in shell weight, so if you buy ready cooked then buy smaller amount) |
500g cooked and peeled large prawns |
1 finely chopped onion |
75g butter |
4tbspn pasata |
15ml brandy |
1 litre fish stock |
2 bay leaves |
150ml single cream |
salt |
chopped fresh parsley to garnish |
Directions:
1. Melt the butter in a large saucepan and gently fry the onions, softening without browning them. 2. Stir in pasata and brandy, and once the alcohol has evaporated add the fish stock. 3. Add bay leaves and season then simmer for 20 minutes. 4. Keeping the heat low, add the cream and seafood, allowing the seafood to heat through but not boil. 5. Serve sprinkled with parsley and with plenty of crusty bread |
