Creamy Mushroom Sauce for Pasta |

This is nice served with cheese and spinach tortellini and grated parmesan Ingredients:
1/2 ounce butter |
4 spring onions, chopped |
8 ounces mushrooms, sliced |
1 cup chicken stock |
2 cups double cream |
pepper, freshly ground |
parmesan cheese, for sprinkling |
Directions:
1. Melt butter in a frying pan over medium heat. Add onions and mushrooms and cook while stirring until mushrooms are soft, about 4 minutes. 2. Stir in stock, cream and black pepper to taste, bring to a gentle boil and simmer for 6 to 8 minutes or until sauce reduces and thickens slightly. 3. Toss with your choice of pasta, sprinkle with parmesan cheese and serve. |
