Creamy Mushroom-filled Rice Ring |

This is a palate pleaser! It's a fun way to have rice as a side dish too. Ingredients:
2 cups sliced fresh mushrooms |
2 tablespoons finely chopped onions |
1/2 can condensed cream of mushroom soup |
1/4 cup water |
1/4 cup milk |
2 tablespoons white wine |
1/2 teaspoon paprika |
1/4 teaspoon crushed thyme leaves |
salt and pepper to taste |
3 cups hot cooked rice, factored into cooking time |
1 cup cooked peas |
2 tablespoons melted butter |
Directions:
1. For sauce: 2. In a saucepan, non-stick or sprayed with non-stick cooking spray, cook mushrooms and onions until tender. 3. Add soup, water, milk, wine, paprika, thyme and salt and pepper. 4. Heat, stirring occasionally. 5. Meanwhile, spray a 1-quart mold with non-stick cooking spray. 6. To make rice ring: 7. Toss rice and peas with butter. 8. Lightly pack rice mixture into the ring mold. 9. Let stand 2 minutes. 10. Loosen edges, invert onto serving plate. 11. Serve with sauce. |
