Creamy Mushroom & Carrot Side |

This is a beautiful creamy side dish that goes well with chicken or pork and one that took me no time at all to put together!!! Try it, make any adjustments you like and let me know how it is!!! Ingredients:
500 g fresh mushrooms or 500 g mixed mushrooms |
8 baby carrots |
2 teaspoons fresh chives |
300 g single cream |
20 g butter |
salt |
pepper |
Directions:
1. Slice your carrots into batons and put on the boil to cook. 2. Slice your mushrooms (you can use any type or a mixture). 3. Finely chop your chives. 4. Add the butter to a frying pan and once melted add the mushrooms, chives, salt and pepper and saute lightly for about 2-3 minutes. 5. Add half the tub of cream and stir for about 2 more minutes. 6. Add the other half of the tub of cream and stir again for 2 minutes. 7. Take the carrots off the boil, drain and add the cream and mushroom mixture to the carrot pan. 8. Mix and serve topped with parsley. |
