This is like Mexican street corn on the cob but easier to eat and whip up and it serves as a great side for any Mexican entree or with potatoes and eggs for breakfast.Trader Joe's sells delicious pre-roasted corn in their frozen aisle Ingredients:
1 cup corn kernel (roasted or charred) |
3 tablespoons cream cheese |
1 teaspoon fresh lime juice |
1/2 teaspoon chili powder |
1/8 teaspoon ground red pepper |
1/2 teaspoon ground cumin |
salt |
Directions:
1. Put all ingredients in a skillet with 1-2 T water. Stir until cream cheese is dispersed throughout and corn is hot. |
