Creamy,salty mediterranean dip. great with veggies or pita chips. Ingredients:
2 cans (15.5oz.ea) garbanzo beans(chick peas) rinsed and drained |
1 lemon juiced |
1 clove garlic,peeled |
1/2c olive oil |
1/3c chopped pimiento -stuffed olives |
Directions:
1. In a bowl of food processor,puree beans,3Tbs lemon juice and garlic 1 min. or till smooth. With machine running,slowly pour in olive oil in steady stream. Stir in pimiento -stuffed olives 2. Transfer to serving bowl. Serve dip with assorted veggies,like green beans,cherry tomatoes,cucumbers,and red peppers or pita chips. Garnish with chopped olives,if desired. |
