Creamy Mango Cheescake

This low fat cheesecake is as creamy as any other but is just a delicious and a healthier dessert option
Ingredients:
1 1/4 cup rolled oats
3 tbs margarine
2 tablespoons honey
1 large ripe mango
1 1/4 cups light cream cheese
2/3 cup low fat plain yogurt
finely grated rind of 1 small lime
3 tbs apple juice
4 tsps gelatin
fresh mango and lime slices to decorate
Directions:
1. preheat oven to 400
2. mix together oats, margarine and honey
3. press in bottom of 8 inch, loose-bottomed cake pan
4. bake for 12-15 minutes
5. Cool.
6. Peel, pit and coarsely chop mango
7. Blend in blender with cheese, yogurt and lime rind until smooth.
8. Heat apple juice until boiling and dissolve gelatin into it.
9. Stir into cheese mixture
10. Pour into pan and chill until set
11. Decorate with mango and lime if desired
