Creamy Low Fat Mashed Potatoes

These mashed potatoes are so creamy & yummy...it's comfort food you can feel good about eating!
Ingredients:
4 large baking potatoes
kosher salt
1/2 block of 1/3 less fat cream cheese
spoonful light margarine (i use smart balance lt. with evoo added)
fat free milk
pepper
Directions:
1. Peel and quarter potatoes and put in cold water
2. Bring to a boil and boil until fork tender (about 15 minutes)
3. drain
4. put potatoes back in pot and add palmful kosher salt
5. add cream cheese and a (wooden spoonful or so) of margarine
6. mix until blended
7. add about 1/2 - 2/3 cup milk (start with small amounts and add more as needed for creamy texture)
8. mash
9. add pepper to taste
10. ***Also great to add 1/2 cup fresh grated parmesan!
