Creamy Linguine With Shrimp and Veggies |

6 quarts water |
1 teaspoon salt, divided |
8 ounces uncooked linguine |
3 cups small broccoli florets |
1 1/2 tablespoons butter |
1 cup chopped onion |
8 ounces sliced mushrooms |
2 garlic cloves, minced |
12 ounces peeled and deveined medium shrimp |
1 julienne-cut carrot |
3/4 cup fat free cream cheese |
1/4 teaspoon ground black pepper |
Directions:
1. Bring 6 quarts of water to a boil in a saucepan. 2. Add 1/2 teaspoon salt, and pasta, and cook 5 minutes. 3. Add broccoli, cook for 3 minutes, or until pasta is done. 4. Drain over a bowl, reserving 1/2 cup of the pasta water. 5. Melt butter in a large frying pan over medium-high heat. 6. Add onion, and mushrooms to the pan, and saute for 5 minutes, stirring occasionally. 7. Add garlic, and saute for 1 minute, stirring occasionally. 8. Add pasta mixture, 1/2 cup pasta water, cream cheese, and pepper to pan, and cook 3 minutes or until cheese melts, and shrimp are done, stirring occasionally. |
