Prep: 5 minutes; Cook: 6 minutes. Fordhook lima beans give you a slightly creamier result, but regular limas will work fine, too. Ingredients:
1 (10-ounce) package frozen fordhook lima beans, thawed |
1/4 cup 2% reduced-fat milk |
1 1/2 tablespoons prepared horseradish |
2 tablespoons light butter |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Cook lima beans with 2 tablespoons water in a 2-quart microwave-safe dish at HIGH 6 minutes or until just tender. (Do not cook according to package directions.) Drain well. 2. Combine beans and remaining ingredients in food processor; process 1 to 2 minutes, stopping 3 times to scrape down sides of bowl, or until mixture is smooth. Serve immediately. |
