Creamy Lentils

A tasty fiber-filled side dish that compliments most main dishes. Spice is optional.
Ingredients:
2 tbsp. olive oil
1/2 large spanish onion- diced
1/2 cup green pepper- diced
1/2 cup red pepper- diced
1 tbsp crushed garlic
salt and ground black pepper
1 cup red lentils (any variety is fine)
2 cups chicken broth
1 tbsp flour (make a slurry with 1/4 c water)
1/2 tsp. crushed red pepper flakes (optional heat)
Directions:
1. Place olive oil in saute pan over medium/high heat.
2. Add diced onion and peppers and brown slightly.
3. Stir in garlic, salt and pepper.
4. Add lentils and cook another minute.
5. Stir in chicken broth, and pepper flakes (if using) and cook covered over low heat for approx. 25 minutes.
6. Make a slurry with the flour and water and mix into the lentil mixture. Raise heat till mixture bubbles and thickens (5 mins). Lentils will become creamy.
7. Taste and add more salt and pepper if needed.
