These are very tasty and would be a good treat for the holidays or anytime your in the mood for lemon. Enjoy Ingredients:
20 nilla wafers, finely crushed |
1/4 c.firmly packed brown sugar |
1 pkg. (8oz) cream cheese, softened |
2 eggs |
3 t. grated lemon peel |
1/4 t. baking powder |
1/2 c. flour |
1/4 c. cold margarine |
1 c. granulated sugar |
2 t. flour |
1/4 c.fresh lemon juice |
2 t. powdered sugar |
Directions:
1. Preheat oven to 350. 2. Line 8 inch square baking pan with foil; extends ends over sides of 3. pan; set aside. 4. In medium bowl combine wafer crumbs, 1/2 c. flour, and brown sugar. Cut in margarine with pastry blender until mixture resembles coarse crumbs; firmly press into bottom of pan; bake 15 mins. 5. Meanwhile beat cream cheese and sugar with mixer on medium speed until well blended. 6. Add eggs and 2 T. flour; mix well. 7. Blend in 1 T. of lemon peel, lemon juice and baking powder; pour over crust. 8. Bake 25 to 28 mins. or until center is set. Cool completely. 9. Cover and refrigerate at least 2 hours or overnight. 10. Sprinkle with powdered sugar and garnish with remaining lemon peel. 11. Lift square from pan using foil; just before cutting into squares. Store leftovers in refrigerate. |
