Creamy Lemon Pasta W/ Chicken |

This pasta is full of flavor. It's bright and fresh and my entire family loves this. I make it with lemons from my trees. Ingredients:
3 boneless skinless chicken breasts |
2 teaspoons garlic powder |
1 teaspoon ground black pepper |
2 (14 1/2 ounce) cans chicken broth |
1/4 cup fresh lemon juice (about 2 lemons) |
1 (8 ounce) package rotelle pasta |
1 cup heavy cream |
1 teaspoon lemon zest |
Directions:
1. Preheat oven to 350 degrees. 2. Place chicken in a lightly greased baking dish. 3. Zest your lemons and set aside for later. 4. Squeeze lemon over both sides of chicken and season with 11/2 tsp of garlic powder and 3/4 tsp of pepper. 5. Bake chicken for about 30min or until juice runs clear. 6. Meanwhile in a large saucepan, season the chicken broth with remaining garlic and pepper. 7. Bring to a boil and add lemon juice and pasta. 8. Cook over medium heat, stirring occasionally until most of liquid is absorbed about 25 minute. 9. Cut or shred chicken and stir into cooked pasta. 10. Add the cream and lemon zest. 11. Cook stirring over low heat for 5 minute. 12. Remove from heat and let stand 5 minutes. 13. Stir thoroughly before serving. |
