Creamy Lemon, Mushroom, Shrimp and Rice |

Fast.creamy and delicious Ingredients:
4 cups cooked white rice |
1 tablespoon garlic-flavored olive oil |
16 ounces white mushrooms, sliced about 6 cups |
1 (250 g) container chive & onion cream cheese |
1 lb shrimp, medium size cooked, peeled |
2 cups baby spinach leaves |
1/4 cup water |
1 tablespoon lemon juice |
1/2 cup parmesan cheese, shredded |
Directions:
1. Heat oil in a large non-stick skillet over medium heat. Add mushrooms and cook 6 minutes or until mushrooms are golden. Add cream cheese, stirring until melted. Add shrimp, spinach and water; cook until heated; about 2 minutes. Fold in cooked rice, lemon juice, and more water if needed. Top with parmesan cheese and serve. |
