Can you imagine - lemon fudge. Can't wait to try this one but I bumped it up with a little zest. Ingredients:
1-1/2 teaspoons plus 1/2 cup butter, divided |
1 package (4.3 ounces) cook-and-serve lemon pudding mix |
1/2 cup milk |
3-3/4 cups confectioners' sugar |
1 teaspoon lemon extract |
1/2 teas. lemon zest |
Directions:
1. Line a 8-in. square pan with foil. Grease the foil with 1-1/2 2. teaspoons butter; set aside. 3. In a large heavy saucepan, combine the pudding mix, milk and 4. remaining butter. Cook and stir over medium heat until thickened. 5. Remove from the heat. Beat in confectioners' sugar and extract. Pour 6. into prepared pan; refrigerate until set. 7. Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. 8. squares. Store in the refrigerator. Yield: about 1-1/2 pounds. |
