This is a sweet,lemony treat! Very easy and quick to make. 8) Ingredients:
1 1/2 cups sweetened condensed milk |
1/2 cup lemon juice |
1 fresh lemon rind, of grated |
2 egg yolks |
1 cup shredded coconut |
1 8 inch pie crust (vanilla is wonderful) |
2 egg whites |
4 tablespoons sugar |
1/2 teaspoon vanilla extract |
Directions:
1. Beat white until frothy,Gradully add sugar,beating until stiff. 2. Add vanilla extract,combine. 3. Pile on top of pie. 4. Heat oven to 350. 5. Combine the first 4 ingredients,mixing well. 6. Add 3/4 cup of the coconut,and pour into pie crust. 7. Cover layer with the prepared meringue. 8. Sprinkle remaining coconut over topping. 9. Bake 10-15 minutes. |
