Creamy and delicious! Make the night before and leave in the refrigerator until ready to eat the next day! I love this salad for weekend meals. I did not have fresh basil on hand this time so used dried basil. Read more . Still turned out delicious! Ingredients:
8 medium potatoes |
2 cups best foods (hellmann's) mayonnaise |
1 cup sour cream |
1 cup greek plain yogurt |
1 to 2 teaspoons prepared horseradish |
1/2 teaspoon salt |
1 medium sweet onion, finely chopped |
1/3 cup basil, chopped |
Directions:
1. Cook potatoes in boiling salted water just until fork tender. Drain and cool. Peel and slice potatoes 1/8 inch thick. 2. In bowl, combine mayonnaise, sour cream, Greek yogurt, horseradish, and salt. In second bowl, combine onion and basil. 3. In large serving bowl, arrange a single layer of potato slices. Cover with a layer of mayonnaise mixture and sprinkle with some onion mixture. Continue layering ending with basil and onion mixture. Do not stir. 4. Cover and chill 8 hours or overnight. |
