Creamy Kielbasa And Greens Soup |

This is a hearty and easy soup. Use your favourite sausage or kielbasa and your favourite greens to create a full meal. Serve with some crusty bread. Ingredients:
8 oz. kielbasa (or your favourite sausage) cut into half circles |
2 tbsp. olive oil |
1 onion, chopped |
2 cloves garlic, minced |
1/2 tsp. dried thyme |
1/3 cup all-purpose flour |
4 medium red potatoes with skin on, chopped in bite-size pieces |
6 cups low-sodium chicken broth |
1 tsp. salt |
1/2 tsp. pepper |
1/2 cup milk |
3 cups of your favourite greens (such as collards or spinach, or can sub with green cabbage), coarsely chopped |
3 green onions, chopped |
2 tbsp. fresh parsely, chopped |
Directions:
1. In a large pot or Dutch oven, over medium heat cook kielbasa, onions and garlic in 2 tbsp. olive oil until browned, about 5-7 minutes. 2. Stir in flour, and thyme. Cook and stir for 1 minute. Add chicken broth and milk and whisk until smooth. 3. Stir in potatoes, salt and pepper. Cover and bring to a simmer. Cook, covered, until potatoes are tender, about 25 minutes. Stir occasionaly during cooking. 4. Add greens or shredded cabbage and cook until tender. Note: cabbage will take longer to cook than greens. 5. During the last 5 minutes of cooking, stir in the chopped green onions and parsely. Serve hot, with crusty bread. |
