This recipe was given to my mother many years ago by her best friend Joanie. It's an ooey gooey cheesey chicken casserole. It's easily my favorite of all my mom's recipes and has become a staple in my home as well. I have received countless compliments and requests for the recipe and I'm sure you will too. Ingredients:
1 lb chicken piece |
1 (8 ounce) can cream of chicken soup |
15 ounces sour cream |
1/4-1/2 cup chicken broth |
8 ounces velveeta cheese |
ritz cracker, 1 sleeve |
1/4 cup butter, melted |
Directions:
1. Preheat oven to 350 degrees Farenheit. 2. Boil chicken in pot on stove until white all the way through. De-bone and shred into small bite-size peices. 3. While chicken is boiling, mix together the filling in bowl (cream of chicken, sour cream, and chicken broth). 4. Layer shredded chicken in the bottom of 9X13 casserole dish. 5. Pour filling evenly over chicken. 6. Slice up Velveeta cheese into thin slices and layer all over casserole. 7. Crumble up Ritz crackers and layer over cheese. 8. Drizzle casserole with melted butter. 9. Cover with foil and bake for 40-45 minutes. 10. Uncover and bake until brown on top (approximately 10-15 minutes). 11. Let cool for 5 minutes (if you can stand smelling the delicious aroma that long!) and then serve. |
