This creamy vinaigrette pairs wellwith a crisp lettuce such as iceburg or romaine Ingredients:
3 tbs red wine vinegar |
3 tbs grated parmesan cheese |
1 shallot minced |
1 garlic clove,minced |
2 tsp dried oregano |
1/4 tsp red pepper flakes |
1/2c mayonnaise |
1/4c sour cream |
1 tbs chopped fresh basil |
1/2c olive oil |
salt and pepper |
Directions:
1. Whisk vinegar,parmesan,shallot ,garlic,oregano and pepper flakes in a small bowl. Microwave until cheese is melted(vinegar will be cloudy) and mixture is frafrant,about 30 seconds. Let cool. 2. Process myonnaise,sour cream,basil and vinegar mixture in foood processor until smooth. With motor running,slowly add oil until incorporated,about 1 min. Season with salt and pepper. Serve. (Dressing can be refrigerated in airtight container for 4 days) |
