Creamy Gruyere And Garlic Soup |

This is ooooh so good. As soon as the weather cools down, the aroma of this soup is one of my favorite smells of the cold weather season!!! It also helps fight of colds :D) and kisses :( Ingredients:
1/8 cup of olive oil |
10 cloves of garlic |
1 onion, chopped |
3 stalks celery, diced |
1 bottom part of leek, chopped |
4 cups chicken broth |
6-8 ounces dark beer |
1 cup heavy cream |
1-1/2 cups gruyére cheese, grated |
Directions:
1. In a large sauce pan, brown garlic in oil. 2. Add onions, celery, leeks and sauté until tender. 3. Add chicken broth and bring to a boil. 4. Reduce heat and add beer and heavy cream. 5. Pureé with hand-held blender. 6. Strain and adjust seasoning; adding salt and pepper. 7. Return to saucepan. 8. Add cheese and heat until cheese is melted, stirring so it doesn't burn. 9. Serve with good crusty bread. 10. ***Breath mints as dessert are probably a good idea*** |
