1. Creamy Green Chili Chicken Enchiladas 2. shopping list 3. whole chicken 4. med yellow onion 5. clove of garlic 6. bunch of cilantro 7. bottle of cumin or smoked cumin 8. can of roasted green chilies 9. large can of green chilie enchilada sauce 10. package of philly cream cheese 11. bag of shredded 4 cheese mexican 12. bag of corn tortillas 13. Whole chicken roasted or pick up a rotisory chicken already cooked from the store 14. Let cool all the way to romm temp 15. Shred it up 16. set aside 17. med onion 18. can of diced roasted green chilies 19. whole clove of garlic 20. brown in a big skillet in a little bit of olive oil 21. add shredded chicken after about 7 min 22. salt and pepper and a little cumin or smoked cumin 23. add a little chopped cilantro when heated through 24. at the same time be heating up green chili enchilada sauce 1 large can 25. and a whole stick of philly cream cheese 26. heat on a med low heat DO NOT SCORCH BOTTOM 27. stir often 28. when melted all the way add a little 4 cheese mexican shredded 29. in a small pan heat some of the sauce and some oil 30. run corn totilla through until soft and pliable 31. wrap chicken up in the soft tortilla 32. place in baking dish with about a 4th of an inch in between them 33. top with shredded cheese 34. enchilada sauce and 35. more shredded cheese 36. bake on 400 untill cheese is all the way melted 37. serve with spanish rice and beans
