Creamy Frozen Cranberry Salad |

Cranberries appear on many holiday menus. Here, they're in a sweet salad with cream cheese, pineapple, and whipped topping. Ingredients:
5 ounces 1/3-less-fat cream cheese |
2 tablespoons light mayonnaise |
1 tablespoon sugar |
1 (16-ounce) can whole-berry cranberry sauce |
1 (8-ounce) can crushed pineapple in juice, drained |
1/2 (12-ounce) container frozen fat-free whipped topping, thawed |
1 teaspoon vanilla extract |

Directions:
1. Combine cream cheese and mayonnaise in a large bowl; beat with a mixer at medium speed until creamy. Gradually add sugar, beating well. Stir in cranberry sauce and pineapple. Fold in whipped topping and vanilla. Pour into an 8-inch square baking dish coated with cooking spray. Cover and freeze 8 hours. Let stand 10 minutes before cutting into squares. |
