Creamy Fettuccini with Asparagus and Lima Beans |

Lima beans are an excellent source of protein, potassium, and iron. Ingredients:
8 ounces pasta, fettuccini |
2 tbsp butter |
2 cups asparagus |
1 cup lima beans |
1/4 tsp pepper |
1/2 cup vegetable broth |
1 cup fat free half and half |
1 cup grated parmesan |
Directions:
1. Cook fettuccini according to package, drain and cover to keep warm. 2. Melt butter in large skillet over medium heat. Add asparagus, lima beans, and 1/4 tsp. pepper. Cook and stir for 3 minutes. Add broth and simmer another 3 minutes. Add cream, and simmer 3 minutes until vegetables are tender. 3. Add vegetable mixture and cheese to fettuccini, toss to combine. Serve immediately. |
