Ingredients:
1/4 cup nonfat yogurt |
1 teaspoon olive oil |
1/2 teaspoon lemon juice |
1/2 teaspoon minced fresh mint |
3/4 teaspoon salt |
1/4 teaspoon sugar |
1/8 teaspoon pepper |
2 cucumbers |
Directions:
1. Stir together first 7 ingredients until well blended. 2. Peel, seed, and slice cucumbers. Add to yogurt mixture, tossing to coat. Cover and chill, stirring occasionally, at least 2 hours. |
