My Grandma always made this for Thanksgiving when we went to her house. I love to make this as an extra sidedish Ingredients:
3 cucumbers |
1/2 small white onion |
1/4 vinegar |
2 tablespoon mayonnaise |
2 teaspoons of sugar |
salt to coat cucumbers |
Directions:
1. Peel cucumbers 2. Slice cucumber very thin almost so they are transparent . I use a mandolin on thiniest setting. 3. Put cucumbers in a bowl and sprinkle with enough salt to cover all the cucumbers . ( It won't be to salty I promise) 4. Let cucumbers stand for 10 mins. 5. Slice onion as thin as the cucumbers. 6. In a bowl mix vinager, sugar and mayonnaise. 7. After cucumbers have sat for 10 mins drain off liquid. ( I like to gently Squeeze them ) 8. Mixed all ingredients together and enjoy! |
