This is refreshing and healthy. I substituted fresh cilantro for the dried mint and loved it. Recipe courtesy of Mr. Food. Ingredients:
3 large cucumbers |
1 small onion, grated |
2 cups plain yogurt |
1/2 teaspoon garlic powder |
1 tablespoon dried mint |
3/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Peel cucumbers and slice in half lengthwise. 2. Scoop out seeds and coarsely chop cucumbers. Place in a large bowl. 3. Add remaining ingredients to cucumbers and mix well. Serve immediately or cover and chill until ready to use. 4. Note: When fresh mint leaves are available chop 2 tablespoons fresh mint leaves in place of dried mint. |
