Creamy Cucumber and Dill Salad |

4 cups thinly slices seedless cucumber |
1 teaspoon salt |
1/3 cup yogurt cheese |
2 tablespoons rice wine vinegar |
2 tablespoons minced fresh dill |
1/8 teaspoon pepper |
1 cup thinly sliced red onion |
Directions:
1. Toss cucumber with salt and set in a colander for 30 minutes. Stir occasionally, rinse and dry. 2. Whisk the yogurt cheese, vinager, 1/2 tsp salt, dill and pepper in a bowl until smoth. 3. Add cucumber and onions and toss to coat, chill. |
