Makes a moister corn muffin than the standard, plus the added ingredients give it more flavor. Ingredients:
2 (8 ounce) packages jiffy corn muffin mix |
2 eggs |
1 (12 ounce) can cream-style corn |
1/4 cup vegetable oil |
1/2 teaspoon lemon juice |
1/2 teaspoon ground nutmeg |
3/4 cup shredded cheddar cheese |
Directions:
1. Preheat oven to 375°. 2. Grease one large muffin pan well, or use paper liners. 3. Mix all ingredients together, blending well. 4. Pour batter into prepared muffin pan, filling about 1/2 full. 5. Bake for 22-28 minutes. 6. Let cool before removing from pan. |
