From a Safeway Select recipe card. Delicious and easy! Ingredients:
14 ounces coconut milk |
1 cup chicken broth |
1 cup basmati rice |
Directions:
1. Bring coconut milk and 1 cup broth to a boil over high heat in a 3 or 4 quart pan (watch it because it will boil over quickly), then add rice. 2. Cover and simmer until rice is tender, about 25 minutes. 3. Remove from heat and let stand, covered, for 5 minutes. |
