Creamy Chicken & Wild Rice Soup Ingredients:
3 c. chicken broth, low sodium, fat free |
3 c. skim milk |
1 1/2 c. baking potato, peeled & cubed |
2 c. chopped chicken breast |
10 oz velveeta light, cubed |
2 tbsp garlic, minced |
1 c. onion, chopped |
1/3 c. all purpose flour |
2 tsp. pepper |
1 c. wild rice, quick cooking, uncooked |
1 c. water |
Directions:
1. Cook rice according to package, omitting salt and fat. 2. Heat large Dutch oven oven medium-high heat. Use cooking spray. Saute onion & garlic 3 minutes. Add broth, water and potato; bring to a boil. Cover, reduce heat and simmer 5 minutes or until potato is tender. 3. Combine milk & flour stirring well. Add milk mixture to potato mixture. Cook 5 minutes or until slightly thick. STIR CONSTANTLY. Remove from heat. Add cheese until melted. Stir in rice, chicken and pepper. |
