1 c = 1 serving***add extras to the count{tortilla strips/cheese/sour cream} Ingredients:
6 c tomatoes, chopped |
8 oz green chilies |
1/2 c onion, chopped |
16 oz chicken broth, no salt added |
7 1/2 oz black beans |
1 1/2 c corn, frozen |
2 c cooked chicken, shredded |
1 t chili powder |
1/2 t cumin |
1/2 t cilantro |
Directions:
1. Combine tomatoes, chilies and broth in large saucepan. 2. Stir in beans and corn, cut off the cob. 3. Bring to a boil; reduce heat to low and simmer stirring often. 4. Add chicken; heat through. 5. Serve with tortilla strips, or corn chips(crushed), reduced fat montery jack cheese (or whatever kind you like), and reduced fat or fat free sour cream. Sometimes I just add fresh squeezed lime juice. Don't forget to add these extras to the count! |
