Creamy Chicken (Or Turkey) and Rice Soup |

I combined a few recipes into one. I first made this after Thanksgiving just to use up the turkey bones. Ingredients:
8 cups chicken broth (canned or homemade) or 8 cups turkey broth |
1 medium onion, chopped |
3 stalks celery, chopped |
3 large carrots, chopped |
3 tablespoons oil or 3 tablespoons butter |
1/4 cup brown rice, uncooked |
1/4 cup wild rice, uncooked |
1/4 cup white rice, uncooked |
3 cups cooked chicken or 3 cups turkey, diced |
1 cup sour cream |
3 cups cheddar cheese, shredded |
salt, to taste |
black pepper, to taste |
Directions:
1. Saute onions, celery, and carrots in oil. 2. Add broth and bring to a boil. 3. Add the brown and wild rice. Simmer for 45 minutes. 4. Add the white rice. Simmer for 15 minutes. 5. Add the cooked chicken or turkey, sour cream, and cheddar cheese. Heat through, do not boil. 6. Salt and pepper to taste. |
