Creamy Chicken Enchiladas

This recipe is fun and easy and tastes really great the next day too!
Ingredients:
1 tablespoon butter
1 (4 1/2 ounce) can green chilies (chopped)
3 1/2 cups cooked chicken, chopped & seasoned to your liking (use pre-cooked rotisserie chicken from your grocer to save time)
2 (8 ounce) packages monterey jack cheese
1 medium onion, chopped
1 (8 ounce) package cream cheese, softened
8 (8 inch) flour tortillas
2 cups whipping cream
Directions:
1. Saute the onion in butter for 5 minutes.
2. Add green chilies (drained) and saute 1 minute more.
3. Stir in the cream cheese (cubed) and chicken.
4. Cook, stirring constantly, until cheese melts.
5. Spoon 2 to 3 tablespoons down the center of each tortilla.
6. Roll tortillas and place seam side down in a sprayed 13X9 baking dish.
7. Top with schredded Monterey Jack cheese.
8. Drizzle evenly with whipping cream.
9. Bake at 350 for 45 minutes.
