Creamy Chicken and Rice Soup |

Found this in BHG Kid Favorites Made Healthy. I haven't tried it yet but it looked good and I have the ingredients on hand. Ingredients:
1/2 cup onion, chopped (1 medium) |
1/2 cup celery, sliced (1 stalk) |
1/4 cup carrot, sliced |
1/4 cup mushroom, sliced |
1 garlic clove, minced |
1 tablespoon butter |
1 (14 ounce) can chicken broth |
1 (10 3/4 ounce) can cream of chicken soup |
1 cup water |
1 (6 1/4 ounce) package chicken-flavored rice pilaf mix |
1/8 teaspoon black pepper |
2 1/2 cups milk |
2 cups chicken, cooked and chopped |
parsley, snipped |
Directions:
1. In a large saucepan cook onion, celery, carrots, mushrooms and garlic in hot melted butter over medium heat until tender. 2. Add chicken broth, soup and water. Stir in pilaf mix with the seasoning packet and pepper. Bring to a boil; reduce heat. Simmer, covered about 20 minutes or until rice is tender, stirring occasionally. 3. Stir in milk and cooked chicken; heat through. If desired, sprinkle each serving with parsley. |
