Creamy Chicken and Lima Bean Stew |

An easy, creamy,delicious stew which can be made ahead. This recipe is true comfort food. Ingredients:
2 lbs chicken parts (skinless) |
2 tablespoons butter |
1 (10 ounce) can cream of chicken soup |
1/2 soup can milk |
1/4 teaspoon poultry seasoning |
1/4 teaspoon salt |
1 dash pepper |
4 medium carrots, cut lengthwise in quarters or 1 (4 ounce) can sliced mushrooms, drained |
6 small onions |
1 (10 ounce) pkge. frozen lima beans |
Directions:
1. Brown chicken in butter; place in a 2 quart casserole. Discard drippings. 2. Stir soup, milk and seasonings together; heat. Add carrots or mushrooms and onions. 3. Cover; cook over low heat for 10 minutes; stir often. 4. Add lima beans; cook until separated; stir often. Pour over chicken. 5. Cover; immediately refrigerate until 1 hour and 15 minutes before serving. 6. Bake, covered, in a 375 degree oven for 1 hour. 7. Uncover; bake 15 minutes more or until chicken is tender. 8. If cooked for serving immediately (not refrigerated) decrease baking time of covered casserole 15 minutes. |
