We had the daughters over for dinner the other night (there is hope, all ye that have teenagers, they grow up and become human once again) tired of looking for pods in the backyard? Sorry I get easily, distracted. Like the step by step pictures, everything connects, it might just be in my own mind but every thing connects. So trying to come up with something that the youngest will eat can be a challenge We are trying to teach her how to cook and figure the best way is for her to pick something that she would like to eat. Make sense to you? She is a bit of a picky eater, and decided she wanted creamy chicken and biscuits, She likes to get one of the all in one box meals of creamy chicken and biscuits. Personally I can't stand that stuff, so...I came up with this one. It was a hit, she went back for seconds heck I went back of seconds. This one of those left over recipes, If you have left over chicken, vegetables, onion whatever it goes into the pot. the same way you make meat loaf...well the same way I make meat loaf anyway. The nice thing about this is that you end up with about 3 cups of chicken stock that you get to play with later.
Ingredients:
3 skinless, boneless chicken breasts or 1 skinned chicken about1 3/4 lb cooked and diced
1 can cream of mushroom
1 can cream of chicken
2 cups frozen mixed cooked vegetables (more or less)
1 cup diced celery
1 1/2 cups diced potato
1/4 cup diced onions
1 clove minced garlic
1/2 cup chicken stock (you will be making this)
salt and pepper
bisuick or favorite biscuit recipe
chicken stock
1 qt water or enough to cover your chicken
2 tsp minced onion
1 tsp parsley
1tsp black pepper
Directions:
1. Preheat oven to 350 degrees.
2. Boil chicken in water until fully cooked and shred, dice or whatever it.
3. In a bowl, add the chicken, creamed soups, spices vegetables and 1/2 cup of chicken stock
4. Mix all together and put into a 9x13 baking dish
5. Cover with aluminum foil and bake for 60 minutes.
6. Make 1 1/2 recipes of biscuits.
7. roll out thin about 1/2 the thickness of your normal biscuits (I cut them into squares and place them on top of your chicken mixture.
8. Turn up the oven to 425 and cook 10 more minutes or until golden brown on top.
