Creamy Cheesy Chili Potato Casserole |

After making way too much homemade chili, I came up with this recipe to use up the leftovers. I haven't seen this one anywhere else, but it is delicious, easy, cheap, and filling. Ingredients:
2 medium potatoes, peeled and sliced 1/8 ,thick |
3 cups of your favorite chili |
1 (8 ounce) package cream cheese, cubed |
1 can cream of mushroom soup |
3 cups sharp cheddar cheese |
salt and pepper |
Directions:
1. Layer sliced potatoes, chili, cubed cream cheese, cream of mushroom soup, and cheddar cheese in a greased casserole dish. 2. Repeat layers (like lasagna). 3. Bake covered in a 350 degree oven for 1 1/2 hours. 4. Top with additional cheddar cheese and bake uncovered for 10 minutes. 5. Allow casserole to set for 20 minutes and serve. |
