Creamy Cheese Sauce for Pasta |

Each serving is 1/4 cup. 1 Fat Exchange. This came from Diabetes Forecast magazine. I have not tried this, just posting for safe keeping. Ingredients:
1 tablespoon olive oil |
4 garlic cloves, minced |
1/4 teaspoon crushed red pepper flakes |
1/2 cup rehydrated sliced sun-dried tomato |
1/2 cup pasta water (reserve this after the pasta has been cooked and drained) |
2 tablespoons grated fresh parmesan cheese |
1/2 cup low-fat ricotta cheese (figro recommended) |
1/3 cup reduced-fat goat cheese |
2 tablespoons diced prosciutto |
2 tablespoons minced parsley |
kosher salt |
fresh ground black pepper, to taste |
cooked pasta |
Directions:
1. Heat the oil over medium-high heat in a large skillet. Add the garlic, crushed red pepper, sun-dried tomatoes, and pasta water. 2. Add the Parmesan, ricotta, goat cheese, and prosciutto to a large bowl. Add in the garlic-tomato mixture. Add the parsley, and season with salt and pepper. Toss with cooked pasta. |
