Creamy Cheese Mashed Potatoes
Ingredients:
2 lbs. (about 5-6 medium) potatoes, peeled, cut into 1 inch thick chunks
1/4 cup (1/2 stick) butter or margarine
3/4 cup evaporated milk
1 cup (4 oz.) shredded cheddar cheese
salt
ground black pepper
Directions:
1. Place potatoes in large saucepan
2. Cover with water; bring to a boil
3. Cook over medium-high heat for 15-20 minutes or until tender; drain
4. Return potatoes to saucepan; add butter and evaporated milk
5. Mash with potato masher, fork or hand-held mixer until smooth
6. Stir in cheese
7. Season with salt and pepper
8. Note: chopped green onions, chopped parsley, chives or cooked, crumbled bacon may be added to mashed potatoes
