Creates an elegant appetizer for dinner or serve with a sandwich for a satisfying lunch Ingredients:
2 cups thinly sliced carrots |
1/4 - 1/2 cup chopped onion |
1/3 cup butter |
1 tsp salt or to taste |
3 chicken bouillion cubes |
3 cups boiling water |
1/2 cup uncooked long grain rice |
2 cups milk |
Directions:
1. Lightly brown the onion in melted butter. 2. Add the carrots and salt and toss to coat. 3. Cook, uncovered over low heat for 20 minutes 4. Add bouillin cubes, water and rice. 5. Cover and simmer 1 hour; then blend until smooth 6. Pour the mixture into saucepan, stir in the milk and heat well-DO NOT BOIL. |
