Creamy Carrot & Orange Soup |

Lovely velvety soup, mysterious flavor. Good starter for a cornish hen dinner Ingredients:
2 tablespoons butter |
1 cup onion, chopped |
1 lb carrot, peeled and sliced & cooked |
2 cups chicken stock |
1/2 cup fresh orange juice |
salt and pepper |
1/4 teaspoon ground nutmeg |
4 tablespoons whipping cream or 4 tablespoons yogurt |
grated orange rind (for garnish) |
Directions:
1. Brown the onion in the butter until soft. 2. Put onions carrots and chicken stock in a sauce pan. 3. Add Orange juice, heat to meld the flavors. 4. Puree in a food processor until very smooth season with salt& pepper and Return to saucepan and blend in the nutmeg. 5. Bring to a boil stirring during cooking time. 6. To serve top and swirl in two tbsp of cream (or yogurt). |
