This summer soup, rich in beta-carotene, is subtly sweet with a hint of nuttiness and spice. Ingredients:
4 cups fresh carrot juice (from 2 lb. carrots) |
3/4 cup pine nuts |
1 avocado, sliced |
2 teaspoons grated fresh ginger |
2 teaspoons lime juice |
1 garlic clove |
1/4 teaspoon cumin |
Directions:
1. Purée all ingredients in food processor until smooth. Season with salt and pepper. |
